  2. in a large saucepan, heat the oil; add the flour and stir constantly to make a roux
  3. When the roux is caramelized, add the chopped greens and mix well until soft (about 6-7 minutes).
  4. Add 1-2 cups of stock to the roux and mix well
  5. add tomatoes, stock, garlic, chicken, sausage and seasonings (don't add scallion)
  6. Bring to a boil, then reduce heat to low. Cook uncovered for 1 hour, stirring gently every 15 minutes.
  7. add the prawns and cook for 15-20 minutes or until the prawns are tender
  8. Serve over rice and sprinkle with chopped chives to season and garnish
