Bohri Samosas are crispy crunchy delicacies. These two or three bite munchies are packed with flavour and make a great party starter. One can choose to fill them with veg or non veg filling, both tastes equally good. Samosa strips are readily available nowadays but I still choose to make my own pattis. I usually make 90 to 100 bohri Samosas at one time. It can be easily stored in the refrigerator upto 1 week and doesn't get bad at all. But trust me it doesnt really stay that long, it finishes off in 2days
Ingredients and spices that need to be Prepare to make SAMOSAS | PATTI SAMOSA | BHORI SAMOSA |:
- 4 Cups Maida
- as required Water to Knead the dough
- 1.5 kg Potatoes (finely diced)
- 750 grms Onion (finely chopped)
- 2 tbsp Turmeric Powder
- 1 1/2 tbsp Kashmiri Red Chilli Powder
- 1 1/2 tbsp Dhaniya Powder
- 1 tbsp Jeera powder
- 1 tbsp Garam Masala
- 2 tbsp Black Salt
- as per taste Salt
- Handful coriander leaves
- 1/2 lime
- as needed Oil for frying
- 1/4 Cup Maida + water for Slurry
Steps to make to make SAMOSAS | PATTI SAMOSA | BHORI SAMOSA |
- The Potato Filling~ In a big kadhai heat 4 to 5 tbspn oil. Add finely chopped onions. Saute until slight brown in colour.



- Now add finely diced potatoes. Add salt to taste and 2 tspn turmeric powder. (optional - 2 to 3 Finely chopped green chillies)
Mix well and cover it using a lid. Let it cook and keep stiring occasionally until potatoes turn soft.


- Once the potatoes are soft add the dry spices. 1½ tbspn Kashmiri Red Chilli Powder, 1½ tbspn Dhaniya powder, 1 tbspn Jeera Powder, 1tbspn Garam Masala, 2 tspn Black Salt and give it a good mix.


- Now add handful finely Chopped Coriander leaves and squeeze in half a lime. Mix well. And keep it aside to cool down completely.


- Samosa Patti ~
Knead a soft dough using maida and water. Make small balls. Roll them out into small discs. Now put oil on top of one disc and place another disc.


- Now brush oil on the second disc and place another one on top.
Now dust some flour on the kitchen counter and roll out this layered disc into a big chappti approx 7" in daimeter.
Make sure it is not rolled out too thin as the middle layer might tear while opening up the layers.


- Now heat a tawa or a pan and place this chappati on it.
Cook slightly from both sides (we don't have to cook these chapati nicely, they have to be undercooked)
Now remove from heat and open the layers gently.


- Stack them together and cut out 3 strips. Cover them nicely with a cloth to avoid drying of the strips.
Make a slurry using maida and water.

- Making the Bhori Samosas~ Folding the pattis can get a bit confusing and needs practice to master, but with a few tries one can get the trick easily.
Step 1
Place the strip on your palm.
Step 2
Bring down one end from the corner making it look like a triangle.
Step 3
Apply the slurry.


- Step 4
Now make another fold holding the end of the triangle.
Step 5
We can see a pocket has been formed. Now put the stuffing. And apply the slurry in the loose end.

- Step 6
Neatly fold the rest of the strip covering the open end. And seal the rest.
Step 7
Prepare the rest of the samosas the similar way.


- Now heat oil in a kadhai. The oil should be lukewarm. Drop a batch of samosa and fry them in low to medium heat until brown and crisp.

- Enjoy these crispy delicacies with green chutney or ketchup. They finish off in minutes so make sure you fry them in big batches
