Instructions for making a Gumbo surf hole.

  1. Place the chicken in a large pot, cover with water, bring to a boil, lower the heat and simmer for 45 minutes. If you prepare the chicken very hard, the meat will harden. Small amounts of meat are obtained gradually. When the chicken is ready, remove it from the oven and set aside (lightly covered). Take the soup and remove any pieces of fat or bones. Prepare for later use.
  2. Cut all the vegetables and place them in a large container. Postpone.
  3. If using fatty sauces (e.g. pork), they should be boiled until the fat has disappeared, then let them dry on a paper towel (top to bottom). I'm Venice, I'm using a very thin sausage, so I'm skipping this step.
  4. Cover 8 eggs with water in a small saucepan, bring to a boil, cook for 7 minutes, then place the eggs in an ice bath. After cooling, remove the skin and set aside.
  5. Heat the vegetable oil in a large saucepan over medium heat. When it starts to swell, add a little flour. If you start frying now, your oil is ready. Immediately add 1/2 cup of flour, stir in the butter until done. Reduce the heat to medium-low, stirring constantly, until the rum turns into milk chocolate. Takes time. Sometimes I rub my nose for up to 40 minutes. There are stones bought in the store, I do not recommend that you do this if you want to avoid this step.
  6. Put all the vegetables in a saucepan and mix for about a minute.
  7. Add the chicken and add the water until it reaches 9 liters. Increase the temperature. Your juices are not included in the soup until it boils. Stir from time to time until done.
  8. Add sausage and shrimp to a saucepan. Boil again, then lower the heat and cook for 30 minutes.
  9. Add the prawns and egg. Boil for 10 minutes.
  10. While the batter is boiling, remove the chicken from the pan, add it to the saucepan and mix gently. Remove the pot from the heat and cover with a lid for 8 minutes.
  11. As a side dish I serve the rice and potato salad.
