  1. Finely chop the onion. If using large shrimp, cut them into 2-3 cm pieces.

  4. Put all the ingredients in a saucepan and heat up. Try adding salt and pepper. To boil.
  5. I use Weipa broth, but if you don't have it, use another chicken broth and boil 200ml of soup.
  6. When the sauce from step 4 boils, stir with a spoon, gradually adding the katakuriko dissolved in the water from step 3 to make the ankake sauce.

  8. Add a large amount of sesame oil to the pan and quickly fry the ingredients from step 1, seasoning with salt and pepper. Here I used shrimp.
  9. Add the ingredients of the beaten fried egg from step 2, butter and everything else and mix well. If you're using canned shrimp, sauté the onion and add the shrimp, canned liquid, and so on to the beaten egg.
  10. Crab sticks are considered canned crabs - just add them to the egg instead of simmering them. Adding the oil you fried the onions in will make it easier for a fluffy, frothy egg to cook.
  11. Place 1 bowl of cooked white rice in a plate or bowl. You can soak a bowl of rice, fill it tightly with rice, and turn it upside down on a plate for a nice clean serving.
  12. Add more sesame oil to the pan you used in step 9 and heat until smoked.

  14. When the pan is hot, immediately add the egg mixture from step 9, stirring quickly from the center with the chopsticks until boiling.
  15. When the egg is soft (the egg white must be translucent), take it out of the pan directly onto the rice.
  16. The cooking time of the eggs depends on the temperature of your stove, but for me it takes about 15 seconds. Put the egg on the rice when it looks like in the photo.
  17. The inside is still liquid at stage 16, but very quickly becomes nice and creamy with residual heat. By simply placing it on a rice pad, it will take on a nice round shape.
  18. Pour the heated ancaque sauce from step 13 over the egg, garnish with chopped shallots or leeks and that's it.
  19. It may seem like too much ancaque sauce to begin with. But that's only the amount needed for 1 adult bowl of rice.
  20. If you are from the Kanta region (Tokyo) and you only need vinegar in the sauce, add 1 tablespoon of rice vinegar. Today I like both versions.
