- 500 ml vegetable oil for frying chicken
- 1 whole chicken, divided into 4
- 2 liters
- 8 pieces of kaffir lime leaves
- 4 lemongrass stalks, take the white part only (bottom), geprek
- 4 chopped green onions
- 1.5 teaspoon salt, or to taste
- 1/2 teaspoon white pepper powder, or to taste
- 1/2 teaspoon chicken stock
- 1 tablespoon vegetable oil
- Ground spices: (mix in a food processor)
- 7 cloves of garlic
- 8 spring onions
- 3 lighter nuts
- 1 teaspoon nutmeg powder
- 3 cm turmeric
- 2 cm ginger
- Hot sauce: Cook 5 chilies + 2 red chilies + 5 garlic until soft. Turn off the fire. Blend all ingredients using a mortar. Add 1/4 teaspoon salt
- Koya sauce: puree 5 cloves of garlic and fry 8 prawns in a mortar
- To complete:
- 4 hard boiled eggs, peeled and chopped
- 50 gr green noodles, soak in boiling water for 3 minutes, bring to a boil, drain
- a few slices of lemon
Soto Ayam (Indonesian yellow chicken soup)
- Heat 1 tablespoon vegetable oil in a skillet over medium heat. Saute ground spices, kaffir lime leaves and limes until fragrant. Turn off the fire.
- Cook the chicken and ground spices in a large saucepan until the chicken is cooked through. Remove the chicken from the pan. Take care of the chicken.
- Add chopped green onions to the soup.
- In a frying pan, fry the chicken in vegetable oil for a few moments. Turn off the fire. Cut the chicken into small pieces.
- In a bowl, place the white rice, noodles, chicken and hard-boiled eggs. Pour the hot chicken stock into the saucepan. Add a little lemon juice to the soup and garnish with koya. L! right
