  25. 1/3 cup fresh parsley (finely chopped)

Steps for Brave Gumbo

  1. Prepare the shrimp and store them in the refrigerator. Take the shell/tail and place it in a small saucepan. Bring water to a boil Ö‡ Old Bay spices Ö‡ bring to a boil.
  2. Reduce heat to low and simmer for 20 minutes. Squeeze the liquid into a large bowl, "peel off". [Request this liquid]

  4. Season the chicken. Pour the oil into a large skillet and sear the chicken over medium heat for 15 minutes on each side. Remove from pan Ö‡ let cool.

  8. When the roux has reached its optimum color, reduce the heat to medium, add the vegetables and stir. Brush the bottom of the pan, stirring occasionally. Heat until vegetables are tender, 7 to 8 minutes; set aside.
  9. Take a large pot (Dutch oven), add the chicken broth and start heating. When the broth is hot, add the vegetable mixture (with a large spoon) Ö‡ Stir until added. Once the roux has dissolved, continue to heat to a gentle simmer.
  10. Reduce heat to medium-low, add garlic, all spices and sauce. Remove the bones from the chicken, cut the meat into small pieces and place in a saucepan. [Skin Ö‡ Bones] Cut into 1/2” sausages Ö‡ Place in a pot.
  11. Add green onion (white part) and cook 50 minutes, stirring occasionally. After a long boil, increase the heat to medium, add the oatmeal and simmer for 15 minutes. The broth will thicken a little.
  12. Reduce heat to low, add shredded shrimp and chopped parsley, stirring occasionally until shrimp are slightly pink. [Add fillet powder at this point if you are not using ocher] Turn off heat; let it rest while you cook the rice.
  13. Place the cooked rice in a small round bowl and serve. Turn the rice bowl to the center of the plate or bowl (bottom). Wrap dumplings around chopped rice and garnish with parsley. Repeat for other serving dishes.
